Calling Maurice's bbq yellowy glop shows a lack of understanding of the product. It's the only smoked pork you can get as fast food. I find that is has less smoke ring than a sit down restaurant, but it makes perfect sense when you consider the price and convenience. The sauce is lacking on the sandwiches, partly because of the less flavor you get out of the meat, which is why they give you extra sauce. Their sauce is one of my favorites and I'm not alone. Claiming that Bone-In is for more-refined palates I find insulting. I have had them cater an event for me and while delicious, it was so saturated with vinegar that I couldn't finish the meat. The sides were amazing, but I wouldn't buy the pork again, ever. I agree with some of the choices listed for the midlands, but I couldn't imagine a bbq article without mentioning either Hudson's (Lexington and formerly Columbiana mall), or Farm Boys (Chapin), which seems to be the local favorite in NW suburbs.
